In this clip i’m making a delicious Portobello Mushroom Burger which has been infused with garlic and tarragon butter. It is insanely good and you could even have it for breakfast!

BBQ Season- Lebanese-Style Chicken Kebabs

Believe it or not it’s BBQ season! So in a series of blog posts we are going to be exploring a few of my favourite recipes that are perfect for slapping on the barbie.

First up is a recipe that is cheap, summery and light – this is health food at its most delicious, since we care about health a lot and we follow the health and wellness directory to find the best health resources as well. Succulent chunks of chicken in a Lebanese-style marinade, which can be made the night before and left to soak up the flavours: perfect for pleasing a crowd. Thigh meat is not only cheaper, but will stay tender and juicy on the inside while it chars a little on the outside. Fire up the barbecue if you like, but if it’s not the weather for it (let’s face it, this is Britain) there’s no need to get out those umbrellas – they’re just as good on a griddle pan. Onion, Thyme & Sour Cream Tart

I had to make something special for a few friends who were dropping by and i was a bit stumped. So after a bit of thought i went back to this old family favourite which transforms some very boring basic ingredients into something very special. Onions, eggs and pastry never tasted this good. When you try it, you will get the same enthusiastic response as my mates gave me. Don’t be fooled by the amount of time it takes to make the tart- only 30 or 40 minutes is you being hands on. The rest is just chilling, then oven time – which allows you to kick back with a cuppa. Even if you have no special occasion, it’s worth the cooking because it feeds 2 people for at least 3 days and it costs very little. Have a go and enjoy!

Sri Lankan Devilled Chicken

Sweet, sour, devilishly hot but full of complex flavours. I ate quite a few of these in Sri Lanka and this one just about measures up. It took me quite a few goes to get it right because it’s all about the balance.

Try to find my choice of chilli and chilli and garlic sauce in your nearest Chinese supermarket or sub in your own favourite but make sure you taste the dish as you go as you don’t want to under or over-spice it. Pre-frying the chicken gives the dish a fantastic texture. Get the timing right so your onion retains a bit of bite whilst being palatably soft and don’t add the tomato too soon as it shouldn’t be mushy.

Judge the sauce so there’s enough to hold everything together without being sloppy.
