Forget the taste experience of your average marshmallow. These sweet treats are stratospherically good.Light, slightly chewy and subtly moreish. Get a cooking/sugar thermometer (cheap at Lakeland or any good catering store) and from the supermarket, leaf-gelatine and liquid glucose. Go for the natural options for flavourings or colourings. Timing-wise, allow at least 2 hours for the mix to set or make your sweets a day or two ahead. Pile them up on the table at your party or tear and float them on top of hot chocolate. If there’s an open fire around, stick them onto skewers (whole) and toast them.
