A quick recipe which produces the most delicious jam. Eat with sweet or savoury
Prep
- Nip the stalks and dark ends off each gooseberry. Wash them well.
Cook
- Drop the fruit into a heavy based pan. Add the elderflower cordial, a splash of water. Simmer, stirring on low heat, trying to retain a few whole berries. Taste for sweetness. Its done once it looks a bit sticky and tastes right to you. Gooseberries are a tart fruit and this quality works well in a cream tea.
Plate
- Decant the jam and leave to cool. Chill to store
